JWR is seeking an experienced and passionate Head Sommelier to lead the wine programme for a prestigious, award-winning property in the heart of Somerset. Responsibilities:

  • Wine List Management: Develop, curate, and maintain an extensive and innovative wine list that reflects the property's ethos, showcasing regional and international wines.
  • Team Leadership: Recruit, train, and inspire a team of sommeliers and restaurant staff to deliver outstanding wine service and education.
  • Guest Experience: Provide expert recommendations and pairings tailored to guests preferences, ensuring a memorable dining experience.
  • Supplier Relations: Build and maintain strong relationships with wine producers and suppliers, sourcing high-quality and unique offerings while managing budgets and procurement.
  • Training and Development: Conduct regular staff training sessions to elevate the team's wine knowledge and service standards.
  • Events and Tastings: Host wine events, tastings, and collaborations to engage guests and elevate the property's reputation for wine excellence.
  • Compliance: Ensure all wine storage and service adheres to health and safety standards.

Requirements:

  • Proven experience as a Head Sommelier or Senior Sommelier in a fine dining or luxury hospitality setting.
  • Exceptional knowledge of global wine regions, varietals, and food pairings.
  • A recognised wine qualification (e.g., WSET Level 2/3 or Diploma, Court of Master Sommeliers certification).
  • Strong leadership and communication skills, with the ability to inspire and educate team members.
  • A guest-focused mindset, with a commitment to delivering a personalised and memorable experience.
  • Experience managing budgets, stock control, and supplier relationships.
